Creamy Shiitake Mushroom Udon Noodles
This is a dish that’s guaranteed to blow your socks off! Our super delicious and easy mid-week creamy shiitake mushroom udon noodles dish is inspired by Maru Udon Executive Chef Shinya’s own personal recipe using our Chinese Chilli Oil. There is so much flavour happening in this dish from the umami of the Below Farm Shiitake mushrooms and the dashi stock. To make this easy to cook at home, we have used Dashi powder instead of freshly made Dashi stock, but if you have time, fresh stock is always best (of course, Maru Udon uses fresh Dashi stock in their dishes)! We used freshly-made udon noodles from Maru Udon in our recipe and they are available across Maru Udon’s 3 branches
INGREDIENTS
- 2 x 180 grams servings of fresh udon noodles from Maru Udon
- 250 grams Below Farm Shiitake Mushrooms (sliced)
- 200 grams Below Farm Oyster Mushrooms (sliced)
- 3 rashers of smoked bacon diced and cooked until crispy in butter (optional or use veal bacon)
- 1 ½ tbsp good quality butter for your crispy bacon (optional)
- 4 tbsp of good quality butter
- 7 cloves minced garlic
- Black pepper to season
- Finely slice spring onions (separate the white and green part)
- ½ cup of Dashi stock
- ½ cup of fresh cream
- 2 tbsp of dark soy sauce
INSTRUCTIONS
- In a medium pot, bring a pot of water to boil and cook the fresh udon noodles for 8 minutes. No need to overcook them as they’ll be cooked more in the sauce later on
- Remove the noodles, drain and then put them straight into an ice bath for about 1-2 minute to stop the cooking process
- In a hot pan, add in 3 tb of Butter and fry off the Garlic and white part of the Spring Onion until fragrant
- Add all of your sliced Mushrooms in the same pan and cook for another 2 - 3 minutes or until the mushroom is soft and fragrant
- Once Mushrooms are soft, add dark soy sauce and stir
- Pour in dashi stock, cook for 1 - 2 minutes on medium heat and add cream. Keep on stirring to make sure everything is mixed well
- Add drained udon and mix the mixture together on medium heat, allowing the sauce to soak into the udon.
- Add your remaining 1 tb of butter in the udon mixture and stir
- Garnish with thinly sliced green part of the green onion and our Chinese Chilli Oil
- OPTIONAL - Crispy diced bacon or veal bacon on top
