Spicy Sesame Noodles with Chilli Oil

Spicy sesame noodles made in less than 10 minutes! Perfect on it’s own or as a side dish to accompany a main.

This nutty, savoury dish has a hint of sweetness and spiciness, balanced out with the black vinegar. In our variation, we topped it with sliced carrot, green onions, cucumber and toasted sesame seeds. You can also serve it with a side of fried tofu (vegetarian option), fried chicken marinated in five spice, sweet soy, salt, and coated in cornflour (salt, white pepper and garlic powder).

INGREDIENTS

  • 400g Fresh egg noodles or wheat noodles
  • 3 Tb Asian sesame paste or Tahini as a substitute
  • 2 1/2 TB soy sauce
  • 2 Tb Chinese black vinegar
  • 1 tsp sesame oil
  • 2 Tb Curious Elephant Chinese Chilli Oil
  • 1 thinly sliced carrot and cucumber
  • 2 spring onions
  • 2 Tb water – Adjust to your preference. If you want it a thinner dressing, add more water
  • Honey – Adjust to your preference
  • Toasted sesame seeds - Give them a little crush in the mortar and pestle to release the nutty aroma of sesame

INSTRUCTIONS

  1. Cook the noodles in boiling water according to the cooking instructions of the noodles of your choice
  2. While the noodles are cooking, add sesame paste, soy sauce, black vinegar, sesame oil, water, Chinese Chilli Oil, and honey to a serving bowl and stir until combined
  3. Thinly slice cucumber, carrot and spring onions
  4. Once noodles are finished cooking, drain completely and toss the noodles into the sauce until all the noodles are well coated. Taste and add more sauce ingredients to your liking. Garnish with spring onions, crushed sesame seeds and top with more Chinese Chilli Oil
