Velvety Soft Egg Omelette with Prawns & Chilli Oil
This is not your average omelette and we’ve made it a little more special with some Shaoxing wine (Chinese cooking wine), soy sauce and our Chinese Chilli Oil. Shaoxing wine is completely optional if you prefer this dish to be halal. This is a great meal when you don’t feel like cooking but also can’t decide what you feel like on Deliveroo!! The trick is to cook the eggs on a low and slow heat with some cornflour for a velvety and tender texture.

INGREDIENTS
- 12 pieces of defrosted prawns
- 5 large eggs
- 1 ½ tsp cornflour mixed with 1 ½ tsp water
- 3 tsp soy sauce
- 5 garlic cloves crushed (because we love garlic)
- 1 tsp Chinese Cooking wine (available from Barracuda)
- Pinch of white pepper
- Pinch of salt
- Chinese Chilli Oil
- Spring onion - chopped
- Neutral cooking oil
PREPARATION
- Heat a non-stick frying pan on high heat. Add a splash of oil and fry off the garlic and prawns for a few minutes until just cooked - remove from pan
- Whisk your eggs together with soy sauce, cornflour mixture, white pepper, Chinese cooking wine and mix
- Pour in extra 3 tbsp of oil on medium heat and wait for the oil to heat up. Once the pan is heated, turn it down to low medium heat and pour in your egg mixture. Do not move the eggs around constantly - allow a thin layer to form then gently pull the sides towards the center with your wooden spoon
- Add your prawns to the omelette
- When cooked to your desired cooking preference, top with spring onion, our Chinese Chilli Oil served on rice
